Small delights: wild garlic

Wild garlic

The woods are pungent with the smell of wild garlic at the moment.

Unlike our usual cultivated garlic, it is the leaves and the flower rather than the bulb which are edible and full of garlic flavour.

The flower heads are very pretty white globes of little star-like flowers, and worth a moment’s attention as you walk past.

When you’ve finished admiring them, you can add them to the table. The leaves can be eaten raw or cooked like spinach, the flowers can go into a salad and the stems can be cut up and used like chives.

If you are feeling more adventurous, the leaves can be used for a homemade pesto. The BBC Good Food website has recipes https://www.bbcgoodfood.com/howto/guide/how-to-use-wild-garlic

Happy foraging!
